Low protein cake with apples and raisins

200g any low protein baking mix

10g egg replacer

10g dry yeast

25g sugar powder

1\2 tsp salt

125ml warm low protein milk (or water + Coffee mate creamer)

10g butter, softened

1 small apple

3 tbsp raisins

In a deep bowl combine the baking mix, egg replacer, dry yeast, sugar powder, salt. Add softened butter, warm low protein milk and mix everything well. Leave the dough to rise for about 1h. Meanwhile in a cup pour some hot water over the raisins and leave them to swell up. Core the apple and slice it thinly. After an hour, add raisins and apple slices to the dough, knead gently and place into the cake form. Leave to rise for another 30-40min. Preheat the oven to 350F and bake for 20min. Serve as is or dust with some sugar powder.

  1. This cake looks and sounds wonderful for my 2-yr old’s birthday. Can you tell how much Phe is in each slice or what the total Phe would be for this cake?
