Braised onions

Finally I got a toy I always wanted – a set of tiny portion-sized ceramic pots. They look like toy crockery but in fact are an amazing way of serving individual portions of just about anything.

This time we’re making BRAISED ONIONS – it’s one of those lovely dishes that you forget in the oven for a couple of hours and they fill the entire house with absolutely marvelous aroma.

2 onions

2 tbsp white wine

4 tbsp chicken broth

1 tsp ground black pepper

 

Slice the onions in thick wedges and place them into individual oven-proof ceramic pots. Add a splash of white wine, broth and a bit of freshly ground black pepper. Place in the oven at 350F (180C) for 2 hours and bake with lid on. Ideally let the onions rest overnight in the oven while it cools down. Serve warm or cold with low protein bread.

for a regular protein version of this recipe add a wedge of bacon to each pot and let the oven do the rest of the magic.
