1 cup Cambrooke sushi rice or any other type of low protein rice (Aproten, SHS, etc )
1 medium carrot
1 tsp mediterranean spice blend (oregano, basil, parsley, thyme, etc)
6 tbsp butter
Peel the carrot and shred on large cheese grater. Finely chop the onions. In a large frying pan melt the butter, add the mediterranean spices, then onions and sautee constantly mixing untill onions become transaparent. Then add shredded carrot and continue cooking and stirring untill carrots become soft and ligthly brown and onions are not burned. Bring a large pot of water to boil. Add low protein rice and cook like pasta untill tender. Drain and rinse well in running hot water. This will make your rice smooth and fluffy. Place hot rice into a large bowl and combine with the carrot and onion mixture. Serve hot.
Note: for extra flavour try adding 2-4 tbsp of broth to the carrot and onions (chicken, mushroom or vegetable broth will do). You can also add cloves or raisins for extra kick of flavour.
