Mexican-style stir fry

As a very busy mom of 2 boys I have very little time for myself. That does not not cancel out the necessity to eat good home cooked food. So this quick recipe lately is my favorite as it takes only 5min to prepare, very flavorful and low in protein. It makes a great quick lunch.

2 tbsp butter or vegetable oil

2 slices low protein bread

1/2 cup cherry tomatoes

1/2 cup green bell pepper, diced

1/4 cup green onions, finely chopped

1 tsp Mexican chili spice mix

1/2 tsp salt

In a deep frying an melt butter on medium heat, add low protein bread ripped into bite-size pieces. Fry, stirring occasionally for 2 min, until bread becomes nicely toasted and light golden brown. Add tomatoes, peppers, green onions, chili spice and salt and continue cooking, stirring occasionally for another 3-4 min, untill peppers become tender and tomatoes become soft. Serve immediately.

Optional – garnish with freshly chopped cilantro.
