Cabbage salad

Attention! This is not a slaw. This is waaay better. A traditional Russian salad, most often eaten during the hot summer days. Can you see all the vitamins in there?

1 cup thinly shredded young cabbage

1/2 cup baby lettuce (organic is good, home grown is even better)

1 cup fresh herbs – whatever you can find in your garden but most typical – fresh dill, onion, chives, parsley.

3 tbsp unrefined sunflower oil

1 tbsp apple cider vinegar or any other light tasting vinegar (no balsamic!!) I am using Melfor vinegar

1/2 tsp salt

1/2 tsp pepper

 

I a salad bowl combine all the ingredients (try to shred the cabbage as thinly as possible) then give it a strong squeeze like you are massaging pizza dough – this will tenderize the cabbage and let the vinegar do its magic.  Serve chilled.

 

P.S. if you dislike vinegar at all, try using lemon juice.
