Greek salad with low protein mozzarella


1 medium tomato

1 cup cucumber

1/2 cup home made low protein mozzarella (see recipe in my previous post)

1/2 cup fresh cilantro

1 large clove garlic

1 tsp oregano

4 tbsp extra virgin olive oil

1 tbsp lemon juice

1/2 tsp salt

1/2 tsp fresh ground black pepper


Dice the tomato and the cucumber and place into a serving bowl. Add mozzarella cheese cut into bite size cubes. Add finely chopped garlic, oregano, olive oil, lemon juice. Season with salt and pepper to taste, stir and serve with a generous slice of bread.
