Green soup



The winter is here for a while and we all need a splash of greenery right about now. Here is a super simple soup that takes about 15min to cook!

1 cup Aproten ditalini pasta

1/2 cup fresh or frozen green peas

1 cup fresh or frozen chopped spinach

1 tsp powdered chicken broth

2 tbsp butter


Set two saucepans each full of about 1L water on high heat. Use one to cook the pasta as usual (drop into rolling boiling water, cook for about 6-7 min untill soft but not mushy (taste one piece to check texture!)). Drain the pasta and set aside.

Use the second saucepan to prepare the soup – super easy – add peas, broth, cook untill tender. Then drop in the spinach and turn off the heat (if frozen make sure the bock thaws out in the soup and soup is back to simmer boil before turning off the heat).  Add cooked pasta and butter. Stir well and serve hot.

Cooking pasta separately ensures the soup will not become cloudy and pasta will not turn into glue on second day after you cooked the soup.
